Each iPad signed in to your account registers itself as a booth device. That is what lets it sync events and upload photos without anyone typing a password at a venue.

An iPad that is mid-event keeps working. It carries on capturing and printing, and signs out once the event ends — a booth dropped to a sign-in screen in front of a queue of guests is worse than a few more minutes of syncing you did not want. Nothing it makes after you revoke it reaches your account.
Revoking is not permanent. Signing back in on that iPad registers it again and it picks up where it left off, which is what you want for an iPad you have found or lent out. It is safe for a lost one because signing in needs your password.
Device limits
Your plan sets how many booth devices you can run at once. Signing in on a new iPad beyond that limit releases the oldest one — Fotova tells you which, because a booth going quiet for no visible reason is the worst way to find out.
